Day 43 of 160

Day 43: Interview in the Hanjeongsik Kitchen

In the kitchen of her traditional Korean restaurant, head chef Yoon Jeonghee (A), who is seventy, interviews Choi Minho (B), a young cook applying for a job.

How to study this lesson 4 steps
  1. Read the situation under the title. It says who is talking and how they know each other, which decides how politely they speak.
  2. Read the dialogue line by line with its translation, until every line makes sense. Still learning Hangul? Tick Romanization to see how each line sounds, but read the Korean first.
  3. Download the Anki deck below and review it every day. It has every line of today's dialogue. Review earlier decks too when Anki asks you to.
  4. Spend at least 30 minutes listening to native Korean, for example from the Resources page. It doesn't matter if you don't understand it yet.

Dialogue

Audio recordings are on the way. For now, each lesson is the dialogue with its English translation.

Minho, I've read your CV. Three years in a hotel kitchen. So why do you want to come to a Korean restaurant?

  2. B ν˜Έν…”μ—μ„œλŠ” 정해진 μ‘°λ¦¬λ²•λŒ€λ‘œλ§Œ μŒμ‹μ„ λ§Œλ“€μ—ˆμŠ΅λ‹ˆλ‹€. 전톡 ν•œμ‹μ˜ 기본인 μž₯κ³Ό 윑수λ₯Ό μ œλŒ€λ‘œ 배우고 μ‹ΆμŠ΅λ‹ˆλ‹€.

At the hotel I only cooked from set recipes. I want to properly learn sauces and broth, the foundations of traditional Korean food.

  3. A 말은 λ‹€λ“€ κ·Έλ ‡κ²Œ ν•΄μš”. μ—¬κΈ°λŠ” μƒˆλ²½ λ‹€μ„― μ‹œμ— λ‚˜μ™€μ„œ μž₯독뢀터 μ‚΄νŽ΄μ•Ό ν•΄μš”. 월급도 ν˜Έν…”λ³΄λ‹€ μ κ³ μš”.

Everyone says that. Here you come in at five in the morning and check the sauce jars first. And the pay is lower than at a hotel.

  4. B μ•Œκ³  μžˆμŠ΅λ‹ˆλ‹€.

I know. Even if the pay is lower, I think what I learn here will be worth far more to me.

For the first two years you'll hardly even hold a knife. Most days you'll just boil broth and wash dishes. Can you stick that out?

  6. B λ„€. νž˜λ“€μ§€λΌλ„ λκΉŒμ§€ ν•΄ λ³Ό 각였둜 μ™”μŠ΅λ‹ˆλ‹€. ν˜Έν…”μ—μ„œλ„ 처음 일 년은 μ±„μ†Œλ§Œ λ‹€λ“¬μ—ˆμŠ΅λ‹ˆλ‹€.

Yes. I came ready to see it through, however hard it is. At the hotel I spent my first year just trimming vegetables too.

It's not the same as trimming vegetables. With our broth, it takes years just to get the knack of judging it by taste. You can't do it without patience and grit.

  8. B μ„ μƒλ‹˜κ»˜μ„œλŠ” μ–΄λ–»κ²Œ λ°°μš°μ…¨μŠ΅λ‹ˆκΉŒ?

My teacher wouldn't let me use measuring cups. She always said, "Judge broth with your tongue, not your eyes."

I'll remember that. I want to be a cook who judges by taste rather than by measurements, too.

  11. A ν•˜λ‚˜λ§Œ 더 λ¬Όμ„κ²Œμš”. λ‚˜μ€‘μ— λ‹€λ₯Έ μ‹λ‹Ήμ—μ„œ 월급을 두 λ°° μ€€λ‹€κ³  ν•˜λ©΄ μ–΄λ–»κ²Œ ν•  κ±°μ˜ˆμš”?

One more question. If another restaurant offers you double the pay later on, what will you do?

Honestly, I might be tempted. But until I reach my goal, I won't leave, whatever anyone offers me.

    And what's your goal?

  14. B μ–Έμ  κ°€ 제 이름을 건 μž‘μ€ ν•œμ‹λ‹Ήμ„ μ—¬λŠ” κ²λ‹ˆλ‹€. 저희 μ§‘μ•ˆμ—μ„œ λŒ€λŒ€λ‘œ λ‚΄λ €μ˜¨ μŒμ‹μ„ μ œλŒ€λ‘œ 살리고 μ‹ΆμŠ΅λ‹ˆλ‹€.

To open a small Korean restaurant under my own name one day. I want to do justice to the dishes handed down in my family for generations.

  15. A μ’‹μ•„μš”. 그럼 면접은 μ—¬κΈ°κΉŒμ§€ ν•˜κ³ , μ•žμΉ˜λ§ˆ μž…μ–΄μš”.

Joayo. Geureom myeonjeobeun yeogikkaji hago, apchima ibeoyo.

Good. Then that's the end of the interview. Put on an apron.

  16. B λ„€? μ§€κΈˆ λ§μ”€μ΄μ‹λ‹ˆκΉŒ?

    Ne? Jigeum malsseumisimnikka?

    Pardon? Right now?

Jeo naembie oneul achime kkeurin yuksuga isseoyo. Matbogo mwoga bujokanji malhae bwayo. Geuge jinjja myeonjeobieyo.

There's broth I made this morning in that pot. Taste it and tell me what's missing. That's the real interview.
